I love pancakes on a Sunday morning… so does my son! This healthy wheat free, flourless pancake recipe is one of my favourite recipes… packed full of healthy ingredients and so easy to make. Plus, they’re wheat free and flour-less! I use my nutribullet to make things easy, but any food processor or a mixing bowl is fine.
Ingredients
1 handful oats (about 60g)… To make it gluten free you could use quinoa flakes, buckwheat flour or any gluten free flour.
1 tablespoon pumpkin seeds
2 tablespoon ground almonds
2 eggs
1 small tin coconut cream (or half tin coconut milk, use the creamy bit)
1 small banana
Method
Whizz all together, heat some butter or coconut oil in a pan. Spoon 2 tablespoons of the mixture per pancake, let them cook until bubbles form on top. Then flip and serve.
For a treat today, I put a montezuma chocolate button on top of each, after cooking. Add some lovely fruit too.
