I love my quick and cheap family recipe for Chickpea Burgers… it uses everything in your store cupboard, ideal if you haven’t been shopping yet or you’re running low on funds, plus they’re an easy way to ensure you get plenty of protein (on a budget too!). They are not suitable for anyone following a Paleo diet, but they are still rich in protein, nutrients and good fats, and absolutely no grains, processed ingredients, nasties or sugar! Ingredients
1 cup frozen peas
1 can drained chickpeas
3 tbspns olive oil
Half tspn turmeric
Squeeze lemon
Pinch salt
Heaped tbspn ground flax
Half courgette
Teaspn balsamic vinegar
1 tbspn light tamari
Tbspn sesame seeds
Handful coriander
Method
Blend peas and chickpeas until well mixed. Then add all other ingredients. Make into patties, place on an oiled or lined baking sheet and cook in oven on 180c for about 20 minutes.
If you’re really looking for a burger fix, serve in a wholemeal bun. Also add some fresh avocado, juicy red tomatoes and slices of cucumber, some lettuce and a dollop of organic mayonnaise. Yum! We had ours with sweet potato wedges and lots of salad!
